SIMPLY SALADS
Any self-respecting salad likes to be dressed up with a few herbs, but don’t just stick to the tried and tested ideas, like always putting basil with tomatoes. Be daring – rosemary likes tomatoes too, you know.
There are so many variations on the salad theme. Here are a couple of my favourites to whet your appetite.
Minted cucumber salad
4 cucumbers
Small handful chopped fresh mint
Small handful chopped fresh flat-leaved parsley
Grated rind of 1 orange
100ml olive oil
100ml red wine vinegar
2 tbsp granulated sugar
Toss the cucumbers in a bowl with the mint, parsley and orange rind. Whisk oil, vinegar and sugar in a small bowl and pour over the cucumber mix. Cover and refrigerate for at least four hours or overnight. Toss again before serving on a bed of ice cold lettuce.
